In 2002 one of the sisters broke her hip at age forty and was in critical condition due to eating gluten. Gluten is a protein found in wheat, rye, barley and oats (oats because of cross contamination). She was diagnosed as having celiac disease and had to change her diet. Celiac is a genetic autoimmune disease that runs in families. Research and education resulted in the siblings becoming gluten free as well. As we searched for a recipe for good gluten free bread for our families, a miraculous thing happened. We were blessed with a recipe for an amazing bread which is soft, has amazing taste, and is foldable. The mix is versatile and may be used to make many items. “We have what you’ve been missing.”
